Here’s a recipe for Oolong Peach Iced Tea
Ingredients:
- 1 ripe peach
- 1 tablespoon sugar, or to taste
- 3-4 tablespoons loose Oolong tea leaves
- 4 cups cold water
Directions
- Place oolong tea leaves in a tea ball or sachet.
- Place the tea into a pitcher and pour cold water over the leaves.
- Steep for 3 to 5 hours at room temperature

Peel the peaches and cut into chunks reserving a few for garnishing

Purée the peach chunks in a blender or food processor.
- Add the sugar
- Remove the tea leaves from pitcher and add the peach purée
Oolong means semi fermented. After rolling, the tea is allowed to ferment only until the edges of the leaves start to turn borwn. The tea is then fired which arrests the fermenting process and captures the interesting character associated with Oolong tea. Described as slightly sweet and toasty with a touch of dryness.
Oolong teas are best when blanched first with hot water, then reinfused tea is poured after about 1 minute. The leaves may be reinfused several times, with each resulting infusion yielding a different liquor form the preceding cup.
